I used to go fishing with my grandfather as a kid. We would get home and we'd then clean the fish and ultimately pan fry it, grill it or bake it. It wasn't until college that I actually tried sushi and found a love for my favorite food.
There is nothing like the contrast of textures--smooth velvety taste of toro or the "crunchy" texture of fish roe. Then, the flavors of wasabi,the soothing ginger or the variety of tangy sauces from eel sauce, to spicy sauce, etc.
How do you judge sushi? by the creativity of the sushi chefs in varieties, names and preparations? By the consistency of the quality of their offerings?

According to a 2010 article by Food & Wine, America has become a sushi nation — with Los Angeles boasting of 276 sushi restaurants and Masa in Manhattan making 200 rolls an hour on a busy day.
But we know you don't have to go to New York City or California for a terrific sushi meal. Millburn, Maplewood and South Orange present an array of amazing restaurants showing off fish delicacies for local diners.
